An unripened cheese that is mild in flavor, firmer than cottage cheese and somewhat crumbly in texture.
- The most common are fruit dumplings (made with plums or, in winter, preserved apricots) served with grated farmer cheese and bread crumbs browned in butter, with sugar sprinkled on top.
- Sandwiches make satisfying dinners, too, and a tabletop grill makes short work of this crispy, melty farmer cheese version.
